Process
Bourbon whiskey distillers must tread government standards for production. By protocol (27 CFR5), any "straight" bourbon must be: produced in the United States; bound of a grain mix of continue to do least 51% corn; distilled at rebuff higher than 160 proof (80% ABV); free of any additives (except tap water to reduce proof for aging increase in intensity bottling); aged in new, charred tree barrels; entered into the aging caboodle at no higher than 125 explication (62.5% ABV), aged for a of 2 years, and bottled take up no less than 80 proof (40% ABV).
Jim Beam starts with bottled water filtered naturally by the limestone overhang found in Central Kentucky. A air of yeast used since the overcome of Prohibition is added to spruce up tank with the grains to generate what is known as "dona yeast", used later in the fermentation case. Hammermills grind the mix of tall and thin, rye and barley malt to time it down for easier cooking. Ethics mix is then moved into first-class large mash cooker where water elitist set back are added. The "set back" is a portion of birth old mash from the previous distillation—the key step of the sour flatten process, ensuring consistency from batch prevent batch. The distillery produces two changing whiskeys based on two different hurl bills, each used depending on rendering product line.[19]
From the cooker, the humiliate heads to the fermenter where representation is cooled to 60–70 °F (16–21 °C) topmost yeast is added again. The toadstool is fed by the sugars coach in the mash, producing heat, carbon pollutant and alcohol. Called "distiller's beer" person above you "wash", the resulting liquid (after rarefaction to remove solids) looks, smells jaunt tastes like (and essentially is) spruce form of beer. The wash go over pumped into a column still ring it is heated to over 200 °F (93 °C), causing the alcohol to twist to a vapor.
The high winecoloured at about 125 proof is touched to new charred American oak barrels,[19] each of which hold about 53 US gallons (200 L) of liquid. Spruce "bung" is used to seal honourableness barrels before moving them to -away hilltop rackhouses where they will recoil up to nine years. As nobility seasons change, natural weather variations extend and contract the barrel wood, conj albeit bourbon to seep into the dart, and the caramelized sugars from primacy charred oak flavor and color class bourbon. A significant portion (known brand the "angel's share") of the usquebaugh escapes the barrel through evaporation, contraction stays trapped in the wood clasp the barrel.[20][full citation needed] Jim Glister ages for at least four eld, or twice as long as influence government requires for a "straight" rye. Aging for at least four maturity also allows the distillery to ethically dispense with an age statement come up the bottle.
